Dosing and Mixing System: This is where the magic begins. Precise amounts of semolina flour and water (and sometimes eggs or spinach for color) are metered into a vacuum mixer.
The Extrusion Chamber: This is the heart of the machine. A high-pressure screw (auger) pushes the dough through a die.
The Die and Cutter: The die is a metal plate with specific perforations. For macaroni, these are circular with a "pin" in the middle to create the hollow center. A rotating blade at the face of the die cuts the tubes to the desired length.
Pre-Drying and Final Drying: Fresh pasta is roughly 30% moisture. To prevent sticking and mold, it must be dried down to approximately 12%.
The most critical part of the process is the Vacuum Extrusion technology. By mixing and pressing the dough in a vacuum environment, the machine removes air bubbles.
Why it matters: Removing air prevents the oxidation of carotenoids (the pigments that give pasta its golden color) and ensures the final product doesn't crack during the drying process.
The pressure inside the extruder can reach significant levels. The mechanical energy is converted into heat, which must be managed. While extrusion takes seconds, drying can take hours. A standard macaroni production line uses a multi-stage drying process:
